Meatless Monday Lunch Club Week #5: Veggie Tacos

Inside: squash, zucchini, carrot, mushroom, arugula, cheese, smoked chipotle hot sauce, fresh salsa.

For this week of Meatless Monday, I decided to prepare some veggie tacos. They’re always a favorite of mine so to share them with my weekly lunch club was a treat. To prepare, I simply cut the squash, zucchini and carrot into narrow strips and sautéed for a few minutes, seasoned with salt and pepper, and then added the mushrooms with a bit of truffle oil. I only wanted to sauté for a few minutes so that the veggies retained a crunch to them, so once I added the mushrooms I let them cook for another minute before taking of the heat.
